Healthy Cod & Butternut Squash Stew

Not only is this dish perfectly packed with fall flavors, but it's also full of heart healthy & immune boosting ingredients!

Cod and coconut milk/oil are both excellent sources of healthy fats, which are vital for maintaining a balanced diet and supporting overall health. Cod, a lean white fish, is rich in omega-3 fatty acids, particularly EPA and DHA, which are known for their anti-inflammatory properties and their role in heart health, brain function, and overall cellular health. On the other hand, coconut milk, derived from the meat of mature coconuts, is abundant in medium-chain triglycerides (MCTs), a type of saturated fat that the body can easily convert into energy. These MCTs are also linked to improved weight management, energy levels, and cholesterol profiles. Wait read that again!! Healthy fats actually help balance cholesterol levels - THAT'S RIGHT! That's why we don't fear fats at Chef Theory Health, they are essential!  But what about carbs???

We also don't fear carbs at CTH.  Butternut squash is a nutritional powerhouse, especially renowned for its immune-boosting qualities, making it an excellent addition to this dish.  Packed with a high content of vitamin A, butternut squash not only supports eye health but also plays a crucial role in enhancing the immune system. This vibrant vegetable is rich in antioxidants, including vitamin C, vitamin E, and beta-carotene, which help neutralize harmful free radicals in the body, reducing inflammation and protecting against various diseases.
