Healthy Vegan Blueberry Cheesecake

Not only is this recipe a guilt-free way to satisfy your sweet tooth, but it's soo good you might want to bring them to your next family get together!  Most desserts are full of sugar, oxidized seed oils and highly processed and refined flours and sugars.  This makes them lacking any nutritional value while causing a major stress on your health!  I stick to a whole foods based approach and these cheesecake cups are a great example of healthy & delicious!

The monounsaturated fats from the almonds & cashews help balance cholesterol levels, making this a great heart healthy options.  The soaked cashew are what give this vegan recipe it's creamy texture.  Be sure to use raw, unsalted cashews.

Dates are one of my favorite ways to sweeten desserts, because of the fiber and mineral content.  Combined with the nuts this dish is rich in calcium & magnesium, which are important for bone health.

Blueberries help add some natural sweetness and fresh flavor, but are also full of antioxidants like anthocyanins, vitamin A & C.  Antioxidants help fight oxidative stress and free radical damage to cells in our body.  This process is important in fighting cancer!

Once you master this recipe, you can try variations with different berries, pumpkin, chocolate and/or coconut.  I tend to use my 6 inch cheesecake pan to make a single cheesecake, but either way it's a great treat, so make sure to check it out!
