A few weeks ago I wrote about My Perfect Smoothie Recipe, which often leaves me with leftover bananas at home. Brown Bananas are a perfect excuse to make this recipe, Give it a Try!
I have a sweet tooth, and rather than just trying to fight against it with willpower, I give in by making healthy desserts!
These banana muffins are my go-to because I often have a couple extra bananas turning brown. I encourage you to use this recipe as a template and play around with adding/substituting other ingredients. I often grind up some pepitos, chia & flax to replace some of the almond flour. Or if I want a nut-free version, I will substitute oat flour. Sometimes I just throw in a handful of oats because I like the texture it adds. If I don't have bananas I will use unsweetened apple sauce & 1 diced apple.
The point is, feel free to personalize the basic recipe to fit your tastes, but here are some basic rules that help keep them healthy:
1) Avoiding the white powders: Sugar & white flour are typically used as the main ingredients in commercial muffins, and cause a blood sugar spike that will often lead to a crash in energy, making you feel tired and reaching for another snack. So I stick with gluten free ground whole grains/nuts/seeds. I have a grinder that I use, but there are many store bought versions for easy access.
2) Avoid the Seed Oils: The next main ingredient in commercial muffins is often a processed seed oil, such as canola, soybean, corn or vegetable oil. These are often oxidized and/or hydrogenated, both of which contribute to poor cardiovascular heath (despite what mainstream information has lead you to believe!). So instead I use olive oil or unrefined coconut oil.
3) Rely on whole food additions: The fresh fruit adds most of the sweetness I need, but if a touch more is needed I recommend Organic Pure Maple Syrup - there is a BIG difference from Pure Maple Syrup & the most common commercial syrups - which are mostly corn syrup - so make sure! When going for chocolate chips, I choose stevia or monkfruit sweetened, but if you use a tradition chip, go for dark chocolate.
This particular recipe is a great way to satisfy your sweet tooth and feeling good while doing it! It's high in fiber & healthy fats which contribute to stable blood sugar, cardiovascular & digestive health. They are gluten free, dairy free & free from processed sugars!
