Healthy Stuffed Chicken Dish

I thought this dish turned out sooo good I had to share it! Hope you Give it a Try!

Prioritizing protein is something I preach to my clients & dedicate an entire week to in my Nutrition Fundamentals for Weight Loss Course.  It's important for so much more than just building muscle!

This dish is packed with protein from the chicken & cottage cheese.  Now, I don't eat a lot of dairy, but I do have some cottage cheese, but I go for a grass fed version if possible.  It adds a great tangy bite & creamy texture to this dish!

I also preach to "Eat the Rainbow" focusing on a variety of colorful foods such as the peppers, spinach & tomato in this dish.  They add the antioxidant rich vitamins & minerals essential for fighting disease!  The peppers are a good source of the antioxidant Beta-carotene, which is converted to Vitamin A in the body and is important for immune function, vision & skin health.  The tomatoes are a good source of Lycopene, which is known for it's potential in reducing the risk of certain types of cancer & heart disease.  This dish is also a great source of Vitamin C as well as minerals like potassium, calcium, and iron. These nutrients support various bodily functions, including immune function, bone health, and energy production. 

Feel free to tweak this dish to your taste and what you have handy in the fridge!  Other great additions/substitutions could be olives, asparagus, mushrooms or artichoke hearts.  If you don't feel like dealing with stuffing the chicken, that's fine!  Just mix the spinach & cottage cheese in the peppers & tomato and back like that!
